Zhangjiajie Mixed Pot (San Xia Guo) is a very famous dish of this area that everybody knows about it. People often ask about the region of all those famous dishes and of course this one is one of them. The story went back to the Ming dynasty (about in the year 1555) when Japanese army kept bringing out wars with Chinese Ming Empire. The battle was so hard that soldiers knew that maybe there was no chance to see their family again, maybe that would the last spring festival they would ever have. So they decided to celebrate this festival with their beloved ones. However, there was not enough time for them to prepare a big celebration because they had to leave for the battle soon. Then a general invented a dish easy to cook named San Xia Guo. It was cooked by frying bacon, tofu and radish together at that time.
"San" in Chinese means "three","Xia Guo" means "cook together". Traditional San Xia Guo is a delicious mix of three kinds of materials, usually vegetables and meat though the specific materials change over time. One more thing, this is a traditional tujia dish, kind of like a snack which you can't find in big hotels. But those small restaurants in zhangjiajie can definitely provide you the real good Zhangjiajie San Xia Guo.
