Ginger sugar, the most characteristic local specialty of Phoenix City, originates from a local snack made by Phoenixers since two or three hundreds years ago. At the beginning, Phoenixers made ginger sugar to treat guests and comfort their children on every occasion of festival; however, with the development of tourism, this snack was welcomed by tourists for its taste and function of curing cold. When the visitors settled down, they would always ask the inn holder for some ginger sugar.

As time passes, Phoenixers found out that the snacks used to comfort little children could have such economic benefit on the market, therefore, naturally the first shop that sells ginger sugar turned up at Phoenix City. Actually, the procedure of making ginger sugar is very simple. First, put the grinded ginger and sugar into a caldron to boil thoroughly; then, cool them on a slippy marble table (or simply a table, but with a piece of iron to avoid the ginger sugar get sticky to the table); during cooling, stir ginger sugar constantly. Third, hang it on a hook and pull into strings as it hardens. Finally, when it turns completely hard and can't be pulled any more, put it back to the table and cut it into pieces by scissors.

Ginger sugar is nutritious besides delicious, especially for prevention from cold. Our ancestors once left the following regimen: "women should not live without lotus root for three days and men ginger; a piece of ginger is better than a bowl of ginseng soup; radish and ginger keep you away from doctor's prescription." Ginger sugar does not sweet to sick like candy, neither does it pungent to breathless like ginger. It is just sweet and hot to the point, leaving a lingering between lips and teeth. What's more, it is also a nice gift if exquisitely packed.
